Spring Vegie Salad


Spring Vegie Salad

Ingredients:

  • 4 cups mixed salad greens (such as spinach, arugula, and lettuce)
  • 1 cup sliced radishes
  • 1 cup sugar snap peas, trimmed
  • 1/2 cup sliced scallions
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh mint leaves
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon honey
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Rinse and dry the salad greens and place them in a large mixing bowl.

  2. Add the sliced radishes, sugar snap peas, scallions, feta cheese, and chopped mint leaves to the bowl. Toss gently to combine.

  3. In a small mixing bowl, whisk together the olive oil, lemon juice, and honey until well combined. Season with salt and black pepper to taste.

  4. Drizzle the dressing over the salad and toss gently until all the ingredients are coated.

  5. Serve immediately and enjoy your delicious spring veggie salad!

Optional: You can add some cooked quinoa or grilled chicken to make it a more filling meal.
