Summer Vegetable Salad
Ingredients:
- 1 cucumber, diced
- 1 tomato, diced
- 1 red onion, diced
- 1/2 cup corn kernels
- 1/4 cup chopped fresh parsley
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- In a large bowl, combine the cucumber, tomato, red onion, corn, and parsley.
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper.
- Pour the dressing over the salad and toss to coat.
- Serve immediately or chill in the refrigerator until ready to serve.
Tips:
- Feel free to add other summer vegetables to this salad, such as zucchini, yellow squash, bell peppers, or snap peas.
- If you don't have fresh parsley, you can use dried parsley instead.
- You can also use a different type of vinegar, such as white wine vinegar or balsamic vinegar.
- If you want a more tart salad, you can add more vinegar.
- If you want a more sweet salad, you can add more honey or maple syrup.
