Ingredients:

Instructions:

  1. In a large bowl, combine the cucumber, tomato, red onion, corn, and parsley.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper.
  3. Pour the dressing over the salad and toss to coat.
  4. Serve immediately or chill in the refrigerator until ready to serve.

Tips:

  • Feel free to add other summer vegetables to this salad, such as zucchini, yellow squash, bell peppers, or snap peas.
  • If you don't have fresh parsley, you can use dried parsley instead.
  • You can also use a different type of vinegar, such as white wine vinegar or balsamic vinegar.
  • If you want a more tart salad, you can add more vinegar.
  • If you want a more sweet salad, you can add more honey or maple syrup.
