Zucchini and Corn Fritters

  1. In a large bowl, combine the zucchini, corn, flour, cornmeal, baking powder, salt, and pepper.
  2. In a small bowl, whisk together the egg, milk, and olive oil.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a large skillet over medium heat.
  5. Add 1/4 cup of batter to the skillet for each fritter.
  6. Cook for 2-3 minutes per side, or until golden brown.
  7. Serve immediately with your favorite dipping sauce.

Tips:

  • For a more flavorful fritter, add 1/4 cup of shredded cheddar cheese to the batter.
  • If you don't have a large skillet, you can cook the fritters in batches in a smaller skillet.
  • Serve the fritters with your favorite dipping sauce, such as ranch dressing, ketchup, or sriracha mayo.
