Ingredients:
- 1 large zucchini, grated
- 1 ear of corn, kernels removed
- 1/2 cup of all-purpose flour
- 1/4 cup of cornmeal
- 1 teaspoon of baking powder
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 egg, beaten
- 1/4 cup of milk
- 1 tablespoon of olive oil
Instructions:
- In a large bowl, combine the zucchini, corn, flour, cornmeal, baking powder, salt, and pepper.
- In a small bowl, whisk together the egg, milk, and olive oil.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Heat a large skillet over medium heat.
- Add 1/4 cup of batter to the skillet for each fritter.
- Cook for 2-3 minutes per side, or until golden brown.
- Serve immediately with your favorite dipping sauce.
Tips:
- For a more flavorful fritter, add 1/4 cup of shredded cheddar cheese to the batter.
- If you don't have a large skillet, you can cook the fritters in batches in a smaller skillet.
- Serve the fritters with your favorite dipping sauce, such as ranch dressing, ketchup, or sriracha mayo.
