Ingredients:
- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon white sugar
- 1 1/4 cups milk
- 1 egg
- 3 tablespoons butter, melted
- 1 cup fresh or frozen blueberries
Instructions:
In a large bowl, sift together the flour, baking powder, salt, and sugar.
In a separate bowl, beat together the egg and milk. Stir in the melted butter.
Add the wet ingredients to the dry ingredients and mix until just combined. Be careful not to overmix; the batter should still be slightly lumpy.
Gently fold in the blueberries.
Heat a lightly oiled griddle or frying pan over medium-high heat. Scoop about 1/4 cup of batter onto the griddle for each pancake.
Cook until the edges start to dry and the surface is covered in bubbles, then flip and cook until the other side is golden brown.
Serve hot with butter, maple syrup, and additional blueberries, if desired.
