Ingredients:
For the pizza dough:
2 1/2 cups all-purpose flour
1 tsp active dry yeast
1 tsp salt
1 tsp sugar
1 cup warm water
For the BBQ chicken topping:
1 boneless, skinless chicken breast, cooked and shredded
1/2 cup BBQ sauce
1/2 red onion, thinly sliced
1/2 cup fresh cilantro leaves, chopped
1 1/2 cups shredded mozzarella cheese
Olive oil, for brushing
Cornmeal, for dusting
Instructions:
In a large mixing bowl, whisk together the flour, yeast, salt, sugar, and warm water until a dough forms. Turn the dough out onto a floured surface and knead for 5-7 minutes until the dough becomes smooth and elastic.
Place the dough back into the mixing bowl and cover with a clean towel. Let it rise in a warm, draft-free area for 1-2 hours until it has doubled in size.
Preheat your oven to 450°F (230°C) and place a pizza stone or baking sheet in the oven to heat.
In a small bowl, mix the cooked and shredded chicken with the BBQ sauce until well-coated.
Once the dough has risen, punch it down and turn it out onto a lightly floured surface. Roll it out into a circle or rectangle, depending on your preferred pizza shape and thickness.
Transfer the dough to a pizza peel or the back of a baking sheet dusted with cornmeal to prevent sticking. If using a pizza stone, carefully slide the pizza onto the hot stone. If using a baking sheet, place the baking sheet with the pizza dough in the preheated oven.
Brush the dough with olive oil, leaving a small border around the edges. Spread the BBQ chicken mixture evenly over the dough. Top with sliced red onion and shredded mozzarella cheese.
Bake in the preheated oven for 12-15 minutes or until the crust is golden brown and the cheese is melted and bubbly.
Remove the pizza from the oven and sprinkle with chopped cilantro. Let it cool for a minute, then slice and serve hot.
