Ingredients:
4 bone-in chicken thighs
1 head of garlic
2 tablespoons olive oil
1 teaspoon dried thyme
Salt and pepper to taste
Instructions:
Preheat your oven to 400°F (200°C).
Peel and separate the cloves of garlic, leaving the skin intact.
In a small oven-safe dish, toss the garlic with 1 tablespoon of olive oil until well coated.
Roast the garlic in the preheated oven for 20-25 minutes or until the cloves are soft and slightly browned.
Remove the garlic from the oven and set it aside to cool.
Season the chicken thighs with salt, pepper, and dried thyme.
Heat the remaining tablespoon of olive oil in an oven-safe skillet over medium-high heat.
Sear the chicken thighs on both sides until golden brown, about 4-5 minutes per side.
Once the garlic has cooled enough to handle, gently squeeze each clove to release the roasted garlic pulp.
Add the roasted garlic to the skillet with the chicken.
Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
Serve the chicken hot, with any pan juices spooned over the top.
