Ingredients:
- 1 pound tomatillos, husked and rinsed
- 1-2 jalapeño peppers (depending on desired spice level), stems removed
- 1/2 cup chopped onion
- 2 garlic cloves, minced
- 1/2 cup fresh cilantro leaves
- 1 teaspoon salt
- Juice of 1 lime
Instructions:
- Preheat the broiler in your oven.
- Place the tomatillos and jalapeños on a baking sheet and broil for 5-7 minutes, or until the tomatillos are softened and the jalapeños are slightly charred. Flip them over halfway through.
- Remove from the oven and let cool for a few minutes.
- In a food processor or blender, combine the tomatillos, jalapeños, onion, garlic, cilantro, salt, and lime juice. Pulse until the mixture is well combined but still slightly chunky.
- Taste and adjust seasoning as needed.
- Transfer the salsa to a bowl and serve with tortilla chips or as a condiment for tacos, burritos, or any dish that could use a little kick of flavor.
