Tomatillo Salsa Verde


 Ingredients:

  • 1 pound tomatillos, husked and rinsed
  • 1-2 jalapeño peppers (depending on desired spice level), stems removed
  • 1/2 cup chopped onion
  • 2 garlic cloves, minced
  • 1/2 cup fresh cilantro leaves
  • 1 teaspoon salt
  • Juice of 1 lime

Instructions:

  1. Preheat the broiler in your oven.
  2. Place the tomatillos and jalapeños on a baking sheet and broil for 5-7 minutes, or until the tomatillos are softened and the jalapeños are slightly charred. Flip them over halfway through.
  3. Remove from the oven and let cool for a few minutes.
  4. In a food processor or blender, combine the tomatillos, jalapeños, onion, garlic, cilantro, salt, and lime juice. Pulse until the mixture is well combined but still slightly chunky.
  5. Taste and adjust seasoning as needed.
  6. Transfer the salsa to a bowl and serve with tortilla chips or as a condiment for tacos, burritos, or any dish that could use a little kick of flavor.
